Apple Cider Vinegar Specialty of Gonzaga, Lombardy Region, Italy
- some herbs
- 50g of raisin
- half a glass of sweet white wine
- a small spoon of sugar
- the peel of half a lemon
- oil, salt and pepper to taste
- 3 tablespoons of Due Vittorie Apple Vinegar *
Boil the chicken in a little water with the herbs and then let them cool.
Once it gets cold, cut it thinly and put the slices in a deep dish.
Soak the raisins in the wine with a little warm water and sugar.
Emulsify in a bowl: oil, vinegar, grated lemon zest and raisin with the wine.
Season with salt and pepper, pour over the fillets to cover them thoroughly and let stand for a few hours.
When served at the table, pour 3 tablespoons of fresh Due Vittorie Apple Vinegar.
