This is a salad made with simple ingredients - potatoes, tomatoes, olives, capers, onions and oregano. Simple, without anything special in appearance. Yet, putting them together you get a plate that is deep in scents, Mediterranean and heady.
As long as you use excellent seasonal products you can create a salad that is so simple it has become one of the symbols of Sicilian cuisine.
Suggestions: use at least two kinds of tomatoes, because it doesn't change just the form but also the taste.
The red onion should be chopped and left for a few minutes to soak in a little Rosé wine vinegar.
- 3 plum tomatoes, chopped
- 7 cherry tomatoes, halved
- 4 medium size new potatoes
- green beans (in season)
- black olives in brine, just enough
- 1 red onion, finely chopped
- 2 tbsp salt-packed capers
- 2 tbsp oregano, chopped
- extra virgin olive oil
- Sea salt and freshly ground black pepper to taste
- Due Vittorie Rosé wine vinegar
First wash the potatoes and boil in salted water until they are cooked (check by inserting a toothpick that must enter with ease). Let them cool completely, then cut them into wedges.
Clean the beans by removing the ends and any strings. Steam them for 8 minutes. Allow to cool completely and season with sea salt & pepper.
Wash the capers under running water.
Put the chopped onion in a bowl with a little Rosé wine vinegar and let it soak for a few minutes.
Mix in a bowl the extra virgin olive oil, a little salt and the oregano.
Compose your salad with tomatoes, potatoes, the green beans, capers, black olives, the red onion. Season generously with the flavored oil and leave to rest in the refrigerator for at least 30 minutes, then leave 10 minutes at room temperature before serving. It is imperative to accompany the salad with homemade bread.
