This year is the first time we have been processing olives as late as June 19th. While there were still olives left on some of the trees, they still hadn't ripened sufficiently by then, And then the rain came!
The weather has really closed in and looks bleak for the next week. The remaining olives will be affected by this amount of water so we have decided to close milling operations for the season.
Most of the oil has been racked and filtered and bottling starts in earnest next week.
The 2016 oil is really tasting well with three blends being produced:
- Azzuro Blend - due for release June 30
- Tuscan Blend - due for release July 8
- Early Harvest -due for release July 15
