Azzuro's olive trees are set within eight groves above Hitapa Bay and benefit from the prevailing South-Westerlies. Because the farm originally was grazed by sheep, the underlying soil has the fertility and the drainage that suits the five varieties of olives that we grow.
The dominant Tuscan varieties of Frantoio, Leccino and Pendolino thrive in this environment and are producing olives that are consistently turned into world-class extra virgin olive oil. The Spanish variety, Picual, also does well here and gives a lovely complex oil each year. Koroneiki also grows well on Waiheke.
Azzuro manages groves on Waiheke Island for other growers so over 2000 trees are nurtured and harvested to produce extra virgin olive oil. Azzuro olive oil is made exclusively from Waiheke fruit with no olives from the mainland used.
Azzuro doesn't use chemicals on the farm, maintaining each grove through mowing and manual weed control methods so we can honestly say that we grow organically.
